1. Heat oil in a non-stick large pan.
2. Add chopped onion, and cook until translucent.
3. Add cumin seeds or cumin powder.
4. Stir in the chopped peppers, mushrooms, peas, and any additional vegetables you’d like. Season with salt and add the green chilli chutney. Cook for a few minutes, until the vegetables soften and the oil begins to separate slightly from the mixture.
5. Add the leftover rice. (To speed up the process, you can warm the rice in the microwave with a splash of water before adding it.) Add a splash of water to the pan to refresh the rice, then mix everything well.
6. Cover the pan and let the rice steam for a couple of minutes. Turn off the heat and let it rest for a few minutes before serving.
7. Serve the fried rice with a side of raita.
